Fasting (with Oil) Zucchini Fritters
Ingredients:
2 medium zucchinis, grated
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons fresh mint, finely chopped
1 cup all-purpose flour
Salt and pepper to taste (We like to add other spices – feel free to experiment!)
Vegetable oil for frying
Instructions:
Prepare the Zucchini:
Wash and grate the zucchinis and place them in a colander. Sprinkle with a little salt and let them sit for about 10 minutes. This will help draw out excess moisture.
After 10 minutes, squeeze the grated zucchini with your hands or a clean cloth to remove as much liquid as possible.
Mix the Ingredients:
In a large bowl, combine the grated zucchini, chopped onion, minced garlic, and chopped mint.
Gradually add the flour to the mixture, stirring to combine. Season with salt and pepper to taste. The batter should be thick enough to hold together when spooned, but not too dry.
Heat the Oil:
In a large frying pan, heat about 1/4 inch of vegetable oil over medium-high heat. The oil is ready when a small piece of batter dropped into it sizzles immediately.
Fry the Fritters:
Using a spoon, drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon.
Fry for about 3-4 minutes on each side, or until golden brown and crispy. Be careful not to overcrowd the pan; cook the fritters in batches if necessary.
Drain and Serve:
Remove the fritters from the pan and drain on paper towels to remove excess oil.
Serve hot, either as is or with a dipping sauce of your choice.
