Middle Eastern Date Caramel No Oil Recipe with a Shout-out to Elias from Aleppo

Ingredients
20 large pitted dates (soak in warm water for 10 minutes, then drain saving the water and adding as needed to thin)
A little more water (as needed to thin)
1 pinch salt (optional)
Instructions
Add the pitted dates to a food processor or high-speed blender (a food processor is generally better for achieving a creamy texture with minimal water).
Pulse/mix on low until the dates are broken into small bits. Then, while the blender is running, slowly add hot water until a paste forms. You may need to scrape down the sides and assist the mixture periodically.
Add just enough water to form a paste. The amount of water needed will depend on your machine and the size/moisture of the dates.
Use as is, or stir in a pinch of salt to enhance the flavor (optional). Store covered in the refrigerator for 1-2 weeks, or even longer.
