Fasolakia (Greek-style Green Beans)
Ingredients:
- 1 kg (2.2 lbs) fresh green beans, trimmed
- 2 medium potatoes, peeled and cut into large chunks
- 1 large onion, finely chopped
- 2-3 garlic cloves, minced
- 1 large ripe tomato, finely chopped (or 1 can of crushed tomatoes)
- 1/2 cup vegetable (or olive) oil
- 1/2 cup water
- 2-3 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions:
- Prepare the Green Beans:
- Wash and trim the green beans, cutting off the ends and any strings.
- Saute the Aromatics:
- Heat the vegetable (or olive) oil in a large pot over medium heat.
- Add the chopped onion and garlic. Sauté until they become soft and translucent.
- Add the Tomatoes:
- Stir in the chopped tomatoes (or canned tomatoes) and cook for a few minutes until the tomatoes start to break down and form a sauce.
- Combine Ingredients:
- Add the green beans and potato chunks to the pot, stirring to coat them in the tomato mixture.
