Here’s a traditional Greek recipe for Fasolakia (Greek-style green beans) that is perfect for the first day of fasting:

Fasolakia (Greek-style Green Beans)

Ingredients:

  • 1 kg (2.2 lbs) fresh green beans, trimmed
  • 2 medium potatoes, peeled and cut into large chunks
  • 1 large onion, finely chopped
  • 2-3 garlic cloves, minced
  • 1 large ripe tomato, finely chopped (or 1 can of crushed tomatoes)
  • 1/2 cup vegetable (or olive) oil
  • 1/2 cup water
  • 2-3 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. Prepare the Green Beans:
  • Wash and trim the green beans, cutting off the ends and any strings.
  1. Saute the Aromatics:
  • Heat the vegetable (or olive) oil in a large pot over medium heat.
  • Add the chopped onion and garlic. Sauté until they become soft and translucent.
  1. Add the Tomatoes:
  • Stir in the chopped tomatoes (or canned tomatoes) and cook for a few minutes until the tomatoes start to break down and form a sauce.
  1. Combine Ingredients:
  • Add the green beans and potato chunks to the pot, stirring to coat them in the tomato mixture.
  • Pour in the water and bring the mixture to a gentle simmer.
  1. Cook the Beans:
  • Cover the pot and reduce the heat to low.
  • Let the beans simmer for about 40-50 minutes, or until the green beans and potatoes are tender. Stir occasionally to prevent sticking, and add a little more water if necessary.
  1. Season and Finish:
  • Season with salt and pepper to taste.
  • Stir in the chopped parsley and let the dish sit for a few minutes before serving.

Serving:

  • Serve the Fasolakia warm or at room temperature.
  • It pairs well with crusty bread and a simple green salad.
