Tahini Cake (No Oil, Simple)

Ingredients

  • 500 g all-purpose flour
  • 250 g tahini
  • 300 g sugar (you can reduce slightly if you like)
  • 400 ml water or fresh orange juice (orange juice gives better flavor)
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon (optional)
  • 1 tsp vanilla (optional)
  • Zest of 1 orange (optional but very nice)
  • A pinch of salt

Instructions

  1. Preheat your oven to 180ยฐC.
  2. In a large bowl, mix the tahini + sugar until smooth.
  3. Add the water or orange juice slowly and mix well.
  4. Dissolve the baking soda in a little orange juice (or water) and add it in.
  5. In another bowl, mix the flour, baking powder, salt, cinnamon.
  6. Gradually add the dry ingredients into the wet mixture. Stir until combined (do not overmix).
  7. Add vanilla and orange zest if using.
  8. Pour into a lined or lightly greased pan (you can use a little tahini to grease it).
  9. Bake for 45โ€“55 minutes, until a toothpick comes out clean.

Notes

  • Tahini replaces oil completely, so no extra fat is needed.
  • If the batter feels too thick, add a little more liquid.
  • You can add raisins or chopped walnuts if you like.
