Greek Spinach Rice (Σπανακόρυζο)

Greek spinach rice, known as Σπανακόρυζο, is a humble and nourishing dish prepared in homes and monasteries throughout Greece. It is simple, fragrant, and deeply rooted in the fasting tradition of the Orthodox Church.

With only a few ingredients, this dish allows the natural flavors of spinach, herbs, and olive oil to come forward. It is suitable for strict fasting days, as it contains no dairy or animal products.

Ingredients (Serves 4)

• 500 g (1 lb) fresh spinach, washed and roughly chopped
• 1 medium onion, finely chopped
• 2–3 spring onions, sliced
• ½ cup white rice (short- or medium-grain)
• 3 tablespoons olive oil
• 1½ cups water or vegetable broth
• 1 small bunch fresh dill, finely chopped
• 1 small bunch fresh parsley (optional)
• Juice of 1 lemon (to taste)
• Salt and freshly ground black pepper
• Tomato paste or sauce (vegan)

Instructions

1. Heat the olive oil in a wide pot over medium heat.
2. Add the onion and spring onions and sauté gently until soft and translucent.
3. Add the chopped spinach and stir until it wilts and releases its juices.
4. Stir in the rice, then add the water or vegetable broth. Season with salt and pepper.
5. Lower the heat, cover, and simmer for 15–20 minutes, stirring occasionally, until the rice is tender.
6. Remove from heat and stir in the dill, parsley (if using), and lemon juice.
7. Cover and let rest for 5 minutes before serving.

Serving Notes

• Serve warm or at room temperature
• Accompanies well with fresh bread, olives, or pickled vegetables
• Keeps well and often tastes even better the next day
